Ingredients
- 1 litre Full-fat whole milk
- 3 tbsp Basmati rice, soaked 30 min
- 5-6 threads Kashmir Saffron, steeped in 2 tbsp warm milk
- 4 tbsp Sugar (or to taste)
- 4 Cardamom pods, seeds ground
- 2 tbsp Slivered almonds and pistachios
- 1 tbsp Rose water (optional)
Kheer is mentioned in Charaka Samhita as a sacred offering and a complete food. Made with full-fat milk, basmati rice, and real Kashmir saffron — not the pale imitation — it is a temple dessert that deserves to be made with the same devotion as any sacred rite.
The Sacred Method
Steep saffron threads in 2 tbsp warm (not boiling) milk for 15 minutes. The milk should turn a deep amber-orange.
Bring milk to a boil in a heavy-bottomed pan, stirring to prevent the bottom from catching.
Add drained basmati rice. Reduce heat to medium-low. Cook 30–35 minutes, stirring every few minutes, until the rice is completely soft and the milk has thickened.
Add sugar and ground cardamom. Stir until dissolved.
Add the saffron milk and slivered nuts. Stir gently — you want the saffron to create golden swirls rather than fully incorporating.
Add rose water if using. Serve warm or chilled.
